Here is a simple but tasty recipe for pigeon breast.

4 pigeon breasts

1/2 large or 1 medium onion

olive oil

cup red wine

1 teaspoon of thyme

2 tablespoons redcurrant or plum jam (homemade if possible)

Salt and black pepper

Fry onion in oil until soft, add breasts and brown on both sides, pour on wine, add jam and simmer whilst stirring for ten minutes, add salt and pepper to taste.

Serve with garnish of choice and fresh crusty or garlic bread.

But this meal is fat free other than the bread, but you need the bread to make the meal

now ! that would be my kind of dinner date ! i have never tried cooking it with jam but it makes sense , as i like to get the old cranberry or apple sauce over a lot of my concoctions, i'll let you know how it goes.
