Salt Marsh Rabbit In Cider (take II)  


Heres a pic of the main ingredients:-



1 Bunny in quarters
handful of streaky bacon
stick of celery
LARGE shallot sliced
1 apple chopped
1 leek sliced
1 large carrot chopped
1/4lb quartered mushrooms
1 1/2pt of dry cider
bay leaf
thyme
sage
4 crushed juniper berries
1/2 garlic sliced
salt & pepper
1 Veg oxo cube (in mug of water)

Fry off the bacon,onions, rabbit season... bung in all other ingredients in a crock pot on high and leave about 1hr and 1/2, thicken with corn flower if needed  :D




EASY simple and bloomin great!
More soon (when we catch some more   ) watcha this space lol   xxx





I have used every part of our catch so nothing unless absolutly essential was wasted by binning I got a wicked skin curing
