rub the cavity of the trout with salt and then wrap in a bag,put it in the fridge over night, that realy helps.when ready to cook slash deep accross the flanks, then rub in some butter, pop under the grill after 4 minutes add a splash of lemon juice and or white wine. carry on grilling for another 8 minutes turning once if its a big bugger!

fillet it if you can then portion.failing that cut into steaks.

for the steaks or fillet portions, brush with olive oil, then a smear of red pesto on top then a sprinkle of finely crated cheese, grill for 10 mins of bake on a pre heated oven for 15 minutes.serve with midi potato's and a rocket alat with dill croutons. :smt005
