nice one fish :smt001 how do you cook your trout ive grilled, fried,baked em they still taste yuk i have never added any other ingredients where am i going wrong? by the way my pork arrives this sataday carnt wait to give your recipe ago :smt001

rub the cavity of the trout with salt and then wrap in a bag,put it in the fridge over night,that realy helps.when ready to cook slash deep accross the flanks,then rub in some butter,pop under the grill after 4 minutes add a splash of lemon juice and or white wine. carry on grilling for another 8 minutes turning once if its a big bugger!

fillet it if you can then portion.failing that cut into steaks.
for the steaks or fillet portions,brush with olive oil,then a smear of red pesto on top then a sprinkle of finely crated cheese,grill for 10 mins of bake on a pre heated oven for 15 minutes.serve with midi potato's and a rocket alat with dill croutons. :smt005
