bacon cure

just been rubbing my cure mix into my pork loin [ sounds a bit rude that ] and put it in a pillow case then hung it in the shed with a bucket under it, how long do i hang it for fish? a week or is it the longer you leave it the better   .. mack

it will be ready for smoking or eating after 3-4 days! got any pics?

never thought of that, will take some next week when its ready   ps...do you mean cold or hot smoking, i've only got a hot smoker

Just out of interest lads, what type of sawdust do you smoke with? We use Ironbark over here when smoking Wurst.

I will rephrase my post as you blokes probably smoke your meat in a totally different way to us in Australia, Can you tell me your processes of smoking your meat please?

yep! i use if i can just ouk shavings and dust,but at the moment ime using oak and mahogany as thats what the cabinate maker is using!!! i think i posted a diagram on here of my smoker.

Cheers mate, in QLD were it is generally hot we only do our smoking in winter and use sawdust from Ironbark trees. Useally the smokehouse is just a small tin shed.

Hopefully will do some bacon this year and try a venison haunch too.

took it out the shed this morning, had a taste, FAN--bdooly--TASTIC really tasty

I think i need to practice my slicing skills, but i'm getting there
best if i don't put any pictures on here of my slices just yet

cut a chunk off and pop it in the freezer till firm (not hard!),about 45 ,then it will be a lot easier to slice,when i used to make the stuff comercially we used the same tecknique even with a slicing machine.

Any chance of posting some to Aust. Fish! lol Starting to get sorted for my wurst, will try some bacon as well and a venison haunch. Will post pics of the setup.

fish, i've just been on the bushcraft forum reading a guy following your recipe but he rubbed in the mix every day for 4 days. is that right, i hung mine in the shed dripping into a bucket for 4 days i only rubbed in the mix on the first day
