Wrong time of year to be making jam? Not for me! needed some more space for deer in freezer the other day so out came a few pound of Damson and some blackberries as well!!
Sunday afternoon in the peeing down sleet saw me standing over the coal aga making Jam! Been ages since I had done any due to lack of time etc. dug out an old 1920's Mrs beetons to see what I could find for a recipe! Yep she had it all there for me. Husband reckoned it seemed too easy a recipe but after all it aint rocket science.

Ok really complicated so pay attention
To each lb of fruit allow 3/4 to a pound of preserving sugar - according to how sweet damsons taste. (I used Jam sugar with added pectin, helps it to set)
Remove the stalks and put the fruit and sugar into a preserving pan, let it stand by the fire (on edge of aga or bottom of warm oven) until some of the juice starts to come out (if you use frozen fruit it happens quite quickly) then put on the hob and bring slowly to boiling poing stirring occasionaly. After about 45 mins check for set and bottle if set point is reached. allow to cool before testing
Blackberry jam is the same but only use half sugar to fruit and add a squeeze of lemon - really improves flaour.
Also check out her bread pudding (not bread and butter) recipe, lived on it when I was growing up. mum used to use stale bread left overs, before they went green, This never had a chance to cool once out of aga, my dad and me would eat a whole one between us after an afternoon of chainsawing logs.
