how do you prepare deer, does it have to be gutted straight the way before taking it home ?

gut it asap,if possible within a couple of hours ,generally its done in the field as thats easy,ie less weight to carry and no inerds festering in yer wheelie bin!

Like fish said, as soon as possible. Off with the bits you dont need (head and lower legs) then hang some where cool. If its cool enough can be hung safely for several days.
Then, whilst its hanging from its hind legs, peel the skin off (Imade a lovely little butchers style knife which is perfect for seperating hide from meat). Once skinned pop it on your table and take the legs off by running your blade roun the natural lins of the muscle at each joint. Then cut down the lentgh of the spine and take off the fillets as you would a fish (sorry fish). Then, if there is any neck, have that meat off also. Then joint whats left for demeating later for casserole or stock making.

Takes about twenty minutes once you get the knack.

The hide can be defleshed, salted then cured to make your own throws or rugs (my children where them when there hunting each other through the house and garden).

Love to know how to deflesh a skin, i've tryed rabbit with no sucses, do you know where i can find step by step pics on the net ?

My skins are in the freezer at the moment as I not yet made a satisfactory fleshing blade. I'm off to talk to the blacksmith up the road tomorrow.
