dugaboys jerkydugaboys jerky arrived this morning, one was sweet and VERY tasty , the other... :smt020 Fxxxxxxxxk me, was hot. fortunately it only lasted 10....15 minutes then i could speak english again, but i loved it. cheers mate, looking forward to making my own ..mack

Fish mate...... just finished some bacon, this was'nt as good as the others i've done, does the cure mix go off after say 6 months or did i just not rub enough in or was it not cold enough hung in my shed .....mack

if the mix was airtight then it should be fine , it is still too warm to hang outside , needs contant below 10c realy.

yeah i made a batch night b4 last,, brisket beef all fat trimmed off,, cyt it thin with the grain using kitchen scissor's... made my marinade with white pepper, lawry's seasoned salt, worster sause, tabasco, chilli seeds, and sweet thie chilli sause......... mixed it and coated the beef strips and left to marinade for a few hours then dried in the oven at about 70 degrees for 6 hours on cocktail sticks criss crossed on the oven rack with a spoon wedged in the top of the door............. absaloutly addictive ,, makin another batch 2nite lol.........

cant get my oven below 110degrees anyone got any ideas ...mack

dont worry about that mate just leave the door open a wee bit further and keep an eye on it my dehydrator runs at 145 flat out shell be fine chers
