Friday Night Venison Pizza

When I lived inthe city and could go boozing on a friday night I'd always end up with a kebab or a pizza. Those days are long gone,  however in a fit of nostalga I drew myself a pint of homebrew and set about creating a pizza.

Every good pizza needs a base:

good handful of bread flour
pinch of salt
pinch of sugar
packet dried yeast and warm water.

Mix all the ingriedients togetjer to get a good dough which you then knead for a whiles.

Leave that to rest, covered, in a warm place.

Now the topping:
I had left over ground venison mixed with some fatty beef brisket (also ground)
to this I added a rough chopped onion
two clove garlic
We have run out of tinned tomatoe and tomatoe puree so I used half a tin of baked beans
one teaspoon chilli powder
one teaspoon cayenne pepper
two big teaspoon ground coriander.

Mix the whole lot together and leave to stand.

After watching a bit more of the net making DVD, thanks to Mayfly

Roll or flatten out your dough onto the baking tray of choice, evenly spread your meat paste and top with cheese.

Bake in a preheated 180 c oven until golden brown and bubbling.

Serve with another pint of homebrew
