Its nearly Silver eel time

Hi Everyone

Best eels for smoking are silvers

Silver eels are the ones heading back to the Sargasso sea to reproduce, they are targeted by the likes of me and other commercial eel fishermen because they demand a much higher price, also large numbers can be caught on the dark nights of October & November especially if you have stormy weather, the rest DYOR

Silvers are the best eels to smoke because they feed up during the summer months and gain a large layer of fat between the skin and flesh, (This is their food for the long journey) this fat keeps them moist during the hot smoking process. Brown and green eels tend to dry out but are still OK (Chefs would not use them though)

The Ideal size for smoking is about 1 to 1.5 pounds, In the next few days I will tell all how I prepare and smoke them, Smoked eel when done properly is food good enough for the Gods and us lot,    

Good Smoked eel fillets is currently retailing about £60.00 per kilo
