Jerk squirrel legs.After my resent foray for squirrels I have 14 back legs in the freezer. So last night I did for me and the kids this recipe. Its very easy and works best if all your ground spices are fresh.
Jerk Ingredients….
4 Squirrel legs.
2tbls Ground Jamaican All Spice. (maybe labelled Pimento)
1tsp of Cinnamon.
¼ tsp of ground nutmeg (helps if this is ground from the nut fresh)
6 Spring onions shopped nice and fine.
6 Scotch Bonnet cut longways
100ml of red wine vinegar
2tbls veg oil
2tbs Of dark soy sauce
1tbs fresh thyme leaves
Salt and pepper.
Combine all of the above ingredients in a large bowl, then place your squirrel legs in the mixture. I find if you cut 3 or four gashes down to the bone the marinade gets right in there, this also helps cook the legs nicely.
Make sure the legs are evenly coated in the marinade, cover and chill for 3 hours.
Next pre heat your oven.
Next place a good strong roasting tin on the hob, add a little oil when its hot add the marinaded legs and fry till they have a nice colour, At this point I must admit my mouth was watering as they already looked delicious, but still need more cooking.
Now place the tin and legs in the oven and roast for about 25 mins or until done.
We had ours with a rocket salad.

I would say very close to pheasant in my opinion.

i shoot quitea few squirrel.but never ate any .is there a reason u just eat the legs.is there not enough meat on the carcus to bother with

Yeah the rest is too srawney and fiddly to bother with. The back legs are just like big chicken wings but tastier. :cool:

ate my first squirrel 2 days ago. friend of mine shot it in her garden rang me asked if i wanted it,just marinated back legs in oil,garlic,tumeric and lemon juice for an hour,hot oven 25 mins, fabulous

i ran out of food on a camp/shoot and desided..if i get some of them squirrels i'll stay longer.......
sooo, one patch in the tree's had like a peep hole out accros a feild corner, one 55 yarder i dropped the squirrel, then put up another that ran to the same veiw point..40 yard shot np's... heard the branch's crash and 'plop' straight into a muddy water hole..both were lost..............
next time though lol...
