mmmm jerky!.......uh 2

Im makn' jerky in the oven as we speak, it should be done by tomorrow morning,.  I actually have a smoker but I prefer doing it in the oven because its more convenient and I don't have to watch it.
it's a mix of Elk, venison, and regular old cow. little bits an pieces of whats been sittn' around in my freezer.
and in case anyone was wondering my recipe for jerky is
crushed red pepper
black pepper
soy sauce
"lots" of brown sugar
garlic powder
and usually Worcestershire sauce (but I was all out)

lookin good............ i cut mine up with scissors to about 2 - 3 inch lengths once done then put it into a sandwich bag

mine all goes in a big hermetically sealed jar aka kilner.

that lot looks goos sp! whats the elk like?

i prefer the elk to the beef and venison, its a different kind of taste. not strong like venison can be sometimes, but it does have a natural flavor that beef does not have, but when its jerked it all pretty much tastes very similar.
