So, I've poached some rhubarb.

I will be getting a large amount of rhubarb, about 50kg, raw.  What can I do with it, particularly something nice or something I can make a profit from?

I thought about jam or jelly and going door to door with it, but I don't know.

Could I make fruit leather from it?

Would it keep if I stewed it all, added a bit of sugar (not enough for jam) and put it hot into clean jars and sealed it?  Would pouring a layer of melted wax over the top stop it going off?  I thought that would be a reasonable way of using it, and saving the energy bill.  How long would it keep with this method?

We also used to have rubarb preserved in sugar the same way as you can with angelica. It could then be used as a sweet treat, decoration for other meals etc. Couldnt tell you how long it would last in this way as it never got left to find out.

With so much you could make a gallon or two of wine and still have enough left over for pies and such.

got any kilner jars? it will make a nice jam too!  try and sell some whole sale to the farm shops and veg shops the stuff is making good money.tesco are getting £1.99 for two stix!

Freezing would be difficult as I don't have that much space.  Might try and see if I can sell it raw.

How do you preserve angilica?  I don't actually know what it's like, is it similar to crystallised ginger?


I might make jam with some of it.

Yes, just like.

Blanch the angelica first then stick in a ja with sugar. Has a scented flavour, sort of a cross between mint and something else herbal.

Got a local car boot? get yourself down there with it and sell any that is extra to what you want.

Other than that looking at good old mrs B there is rhubarb adn orange Jam, Rhubarb jam, Rhubarb Jelly and Rhubarb marmalde all worth a try! Make up a load and then go to the Car boot sales!!

Take along any other bits you may think you can flog!, down here in Cornwall I often take of chuncks of my herbacious plants and put them in pots and sell for £1 each, They dont need to look top form at that sort of price, but ideal to market towards the people that say they kill anything they plant.  They will be tempted by the price and if they are good splits you sell they will be happy.
