ReThe juice from birch is very nice and refreshing to drink. Here in Sweden were i live we use to do this in springtime. We believe here it's good for the health.

if you get enough boil it and reduce to a syrup then bottle! also it makes a realy good wine,and a base for a fine spring ale!

reYeaah, that's right. Mix the juice with little sugar, some lime, couple of ice cubes and crystal clear koskenkorva VODKA from Finland and the day is saved

it is said that it has cancer fighting properties in it as well. i missed tapping ours last year. wont do that again.
oh you can add it to a single malt as well if you so desire.

Wine is the best thing to make from it, really does it justice. Theres plenty of recipes on the net as well. Just remember to plug the tree after you finished tapping it ;)

I always make a plug from a peice of the tree i am tapping. just something i do no perticular reason.
