the best belly pork youl ever taste.......does exactly what it say's on the tin....................................................
i know its not a game recipe,, but we all like a bit o belly pork dont we
get a nice sized sheet o belly pork and pre score the slice's into the rind and top fat only,, this will make it easier to slice once cooked
then lay ya pork meat side up and rub on one of those dry marinade's such as bbq, chinese, tandori ..whatever,,, but only on the meat and sides and not the fat which is facing down on the plate.......... place in the fridge for a few hour's or 24 if you got the time.................
now comes the cooking part place the meat on a rack in the oven rind up and rub salt or seasoned salt over the top to aid in the crackling process
directly under the rack you wanna place a large baking tray filled nearly 3 inches or so deep on another rack.... so it goes from the bottom up in this order oven rack,,, baking tray of water,,,, then oven rack with belly pork..
get them stacked as close as possible and to the bottom of oven ....... cook on say 200 for about 1 hour 10 or there about's
as it cooks the fat drip's into the water and the water begin's to steam resulting in the most mouthwatering tendef and juicy belly-pork you ever did eat............................... do it once and i swear youl be hooked
