Wifes just done a freezer check,maybe 110-130LBS of trout fillets,any ideas on recipes as they need to go to make room for the salmon soon

put a bit of seasoned dry flour in a bag < sandwich bag's are good > then put in your trout and give it a shake to cover it, then shake off the exess then fry untill golden served best with some beetroot , mash and a couple of spring onion's and a good dollop of salad cream.. thats my favourite trout dish,, also nice wrapped in tinfoil and chucked on the bbq,,,, what about making some fishcakes ,now there's a good idea if no one else aint already tried some...................

Yoggs,I have about 200 Thai chillie fishcakes in the freezer at the moment,if you have any english fishcake recipes I would try them,and I will try your fried trout recipe this weekend,thanks,you can never eat enough trout Thats what my wife tells me anyway,she wants the freezer space I guess

How about preserving the trout a different way?
Gravad lax with salt.
Trout mops with vinegar, shallots and baby courgette.
Cold smoking also preserves but you dont fancy that.
Air dried with or without seasoning.
Invite friends round for fish curry, fish goujons (breaded and fried/baked), trout terrine, trout-on-a-stick?

heres a trout pate recipe.
1lb of cooked flaked trout,
5 good tablespoons of fresh mayo
half a teaspoon of fresh gound black pepper
1 good dolop of horseradish sauce
juice and zest of half a lemon
pop it all in a bowl and mix till like a pate! as simple as that! try variations,a bit o chilli,or some watercress.
