Venison Sausage

Last weekend my youngest son and I made our very first venison sausage.

Such was our success that I have raided the rainy day fund and purchased an electric sausage stuffer. I have the casings soaking, venison, blacktip rabbit, pig defrosting, box of wine (got to keep libricated when creating) and breadcrumbs already. Plenty of seasonings in the cupboard and we're ready to go!

You guys are welcome to drop by and try the results, bring your own plonk and tent.

Huge pile of sausage now in the fridge.
My greatest critics have delivered their marks and suggestions for the next batch. 8/10 and use less rusk.

Very hearty sausages that sit well with a good shiraz and cheesy mash!

I live in gods own county the republic of yorkshire. Not far from York itself.

I'm planning a venison spit roast for august if you fancy popping in.
