Hey guys/gals.
Today I managed to get my first blacktip rabbit. Its all gutted/jointed and the legs are in the fridge for tomorrow and the rest was frozen for a later date. What would be a good recipie for cooking the legs?

Ive only ever roasted them but my uncle slow cooks them in red wine and an equal amount of water and adds a bit of spices/herbs,ive tried it and its good,not tough at all if cooked slow enough.

Well had it fo tea last night and my God it was good!!!

What I did was froze the back, ribs and liver but kept out the 4 legs. First I trimmed one hind leg and put it a side. Then I stripped the meat from the other 3. I popped the bones from the legs into a pot and filled it with boiling water and left it to simmer away for about half an hour with an onion and mixed herbs (could have done it longer but was starving!) I diced some onions and carrots from the garden and chucked them in the pressure cooker along with some garlic and the cut meat. Browned the meat then added the stock from the pot (through a sieve) and chucked in some king edward tatties from the garden and put the lid on put it up to full heat til it started hissing then lowered it to medium heat. Leave for half an hour to cook through.
While the stew was cooking I took the hind leg I left out and coated it in flour and salt and pepper. Chucked it in a frying pan and fried it slowly on all sides pouring any remaining stock on top for flavour.
By the time it was all done i remembered I forgot the mushrooms!!!!   So I grabbed a handful and chucked them in the frying pan that had some of the stock left in it. This gave them that flavour of the blacktip rabbit. VERY GOOD!
End result put it all in a large serving bowl and dust off with pepper. Was absolutly amazing so much better than rabbit! Sorry didnt take any pics as it didnt satay around long enough.
Had one very sulky dog as he saw it being prepared and cooked and it drove him mad as it was his catch lol (he got some off cuts and trim but that was all he'd already eaten!! greedy git)
Next I need to think what to do with the ribs,back and liver.

In the bottom pic I was tempted to drape my catty over its neck for something arty but that would be false as I didnt shoot him lol
