from jason and delilah who are an old gypsie couple that visit these parts now and again....its best just to take the tail off and then treat as any conie,use more seasoning,best are farm cats as they have a relwetively fish free diet,which can taint the flesh.
one plump cat,
seasoned flour,
4oz fat ham diced,
rough scrumpy ,to barely cover,
2 tablespoons butter,
8 oz hot cream,
1/2 tablespoon flour,1 tablespoon butter mixed,
salt and pepper.
skin,clean and disjoint the cat.soak the pieces in cold salted water for 20 minutes,wipe them dry and dust in seasoned flour.in a heavy skillet,brown the diced ham fat.add the cat and brown the pieces well on all sides in the ham fat.add barely enough rough scrumpy to cover the cat,cover the skillet and simmer untill most of it has evaporated and the meat is tender.add the butter,increase the heat,and quickly brown the pieces of meat oncemore.remove the cat to a warmed serving platter,add the cream to the juices remaining in the skillet to deglaze.stir in,bit by bit, the flour and butter paste,add the seasoning to taste,and strain the sauce onto the dish ENJOY!!!!!!!!!!!

| Fish old bean,eaten cat,not actually cooked like that granted,spit-roast over a jungle fire,also had dog stew,was riding a motorbike down a jungle track and stopped at a corrugated-iron shack of the type which ALWAYS sells bottles of iced cold coke.Couple of drunken guys sitting outside eating,they offered me a plate of stew and rice,nice,whats the meat?One of them took me out back,showed me a dog skin,I think he expected me to puke,I had another platefull,I was hungry :shock: |
